Las Palmas and loveable producer, Chalo Fernandez return with a fresh crop from the lush mountains of Southwest Huila. Its clean, chocolatey notes and caramel profile make it perfectly suited for a developed espresso roast. So we did just that.
This is a traditionally washed Castillo lot known as ‘Lot Cabildo’ on the plantation. Cherries are hand-picked, pulped, and fermented for 14 hours before the mucilage is washed. Chalo’s sensational processing methods create a deeply flavourful cup with the sweetness of a freshly baked apple pie.
Best enjoyed on espresso, but Colombian coffee lovers will be delighted no matter the method.
